Our promise to you is to bring you the finest fish from ship to plate in less than 48 hours.

They say time and tide wait for no man. When it comes to fish, it’s definitely true. Fish just does not keep well. It has to be very, very fresh.

To deliver your seafood within 48 hours, our buyers are up before sunrise every day to select the best produce straight from the Day Boats.

Then we work expertly and diligently through the day. Grading and weighing. Scaling and gutting. Filleting and pinning. Carefully packing and labelling.

Our vans leave Flying Fish HQ at 7 p.m. on the dot. Our drivers know the specifics of each item. Who is expecting what. Where it is on the van. Where to go when they get there.

We do this five days a week, 52 weeks a year, giving our customers a ready and limitless supply of freshly caught Cornish fish.

After years of trial and error we’ve got this down to an exact science and a fine art.
